Deb’s Favourite Carrot Cake
Ingredients:
1 cup plain flour, sifted
1 cup self raising flour, sifted
1/2 teaspoon bicarbonate of soda
1/2 teaspoon nutmeg
1/2 teaspoon ground cinnamon
2 cups of grated carrots
1/2 cup walnuts
1/2 cup sultanas, sifted
1 cup brown sugar firmly packed
1 cup cooking oil
3 eggs
Method:
Line your cake box
Sift flours, spices & bicarbonate of soda in a mixing bowl
Stir in carrots, walnuts, sultanas & brown sugar
Whisk together cooking oil & eggs in a jug & pour over dry ingredients
Pour into prepared cake box & pop into a cold oven then bake for 1/2 hour on
150 degrees then turn to 130 degrees & bake until cooked & tested with a skewer & skewer comes out clean
Cool in the cake box before turning out
Cream Cheese Frosting
Ingredients:
250g cream cheese
1 1/2 cups icing sugar
1 teaspoon vanilla essence
1 cup walnuts
Method:
Beat cream cheese, icing sugar & vanilla essence in a mixing bowl until smooth
Spread over cooled cake, top with walnuts
