Grandad’s Fruit Cake

Ingredients:
1 cup plain flour, sifted
1 cup self raising flour, sifted
1 teaspoon bicarbonate of soda
1/2 teaspoon nutmeg
1 teaspoon mixed spice
1kg mixed fruit
200g glace cherries
1 cup raw sugar
1 cup milk
125g butter
2 eggs, beaten
1/4 cup Sherry or Rum (if desired)
1/4 cup almond slithers (if desired)

Method:                    
Line your timber cake box
Place butter, milk, sugar, mixed fruit, cherries into a large saucepan & bring to the boil
Turn down heat & simmer for 5 minutes - place aside to cool
Sift flours, spices & bi-carbonate of soda into a large mixing bowl 
Mix in ingredients from saucepan, add beaten eggs, almonds & alcohol (if desired)
Pour into prepared cake box & pop into a cold oven & bake for 3/4 hour at 150 degrees then cover top once it has browned up
& bake until tested with a​skewer & the skewer comes out clean                                           ​
Cool in the Timber Cake Box before turning out
