- GRAND DAD'S FRUIT CAKE
Ingredients 1 cup plain flour, sifted
1 cup self raising flour, sifted
1 teaspoon bicarbonate of soda
1/2 teaspoon nutmeg
1 teaspoon mixed spice - 1kg mixed fruit
- 200g glace cherries
- 1 cup raw sugar
- 1 cup milk
- 125g butter
- 2 eggs, beaten
- 1/4 cup Sherry or Rum (if desired)
- 1/4 cup almond slithers (if desired)
- Method
- Line your timber cake box
- Place butter, sugar, mixed fruit, cherries into a large saucepan & bring to the boil
- Turn down heat & simmer for 5 minutes - place aside to cool
- Sift flours, spices & bi-carbonate of soda into a large mixing bowl
- Mix in ingredients from saucepan, add beaten eggs, almonds & alcohol if desired
- Pour into prepared cake box & pop into a cold oven & bake for 3/4 hour at 150
- degrees then cover top once it has browned up & bake until tested with a
- skewer & the skewer comes out clean

FAVOURITE CARROT CAKE
Ingredients 1 cup plain flour, sifted
1 cup self raising flour, sifted

1/2 teaspoon ground cinnamon
2 cups of grated carrots
1/2 cup walnuts
1/2 cup sultanas, sifted
1 cup brown sugar firmly packed
1 cup cooking oil
3 eggs
Method Line your cake box
Sift flours, spices & bicarbonate of soda in a mixing bowl
Stir in carrots, walnuts, sultanas & brown sugar
Whisk together cooking oil & eggs in a jug & pour over dry ingredients
Pour into prepared cake box & pop into a cold oven then bake for 1/2 hour on 150 degrees then turn to 130 degrees & bake until cooked & tested with a- skewer & skewer comes out clean
- Cool in the cake box before turning out
Cream Cheese Frosting
Ingredients 250g cream cheese
1 1/2 cups icing sugar
1 teaspoon vanilla essence
1 cup walnuts
Method Beat cream cheese, icing sugar & vanilla essence in a mixing bowl until smooth
Spread over cooled cake, top with walnuts-
DELICIOUS RICH CHOCOLATE FUDGE CAKE
Ingredients 250g butter
1/2 cup milk
180g block dark chocolate
2 cups raw caster sugar
1 1/2 cups self raising flour, sifted
1 cup plain flour, sifted
1/4 cup cocoa powder, sifted
2 eggs, lightly beaten
1 cup cold water
Dark chocolate curls to decorate
Method Line your cake box - Place butter, water, milk, chocolate & sugar in a large saucepan over
- a medium heat. Cook, stirring occasionally, for 8 to 10 minutes or until smooth &
- combined.
- Set aside for 20 minutes to cool.
Whisk flours& cocoa into chocolate mixture
Whisk in eggs until smooth & combined
Pour mixture into prepared cake box & pop into a cold oven bake at 150 deg for 1/2 hour or until top is crunchy then cover with baking paper and continue - to bake until cooked & tested with a skewer & skewer comes out clean
Cool in cake box before turning out
- Set aside for 20 minutes to cool.

CHOCOLATE GANACHE
Ingredients 2/3 cup cream
2 x 200g blocks milk chocolate, chopped Method Place chocolate & cream in a microwave safe bowl
Microwave on medium-high (75%) for 1 to 2 minutes, stirring with a metal spoon every 30 seconds or until smooth.
Refrigerate for 15 minutes or until thickened
Spread over cooled cake & top with chocolate curls
